Love This Knife!
It does cut through sticky-type substances without sticking or goo all over the knife (I am trying to avoid saying it did a great job cutting the cheese, which it did). I also cut through a chocolate bunt cake with really sticky, wet, gooey icing, and voila, it cut clean over and over again! Love it. Worth every penny!

The Wusthof knives are the best in my opinion. This "cheese" knife is extremely well-made and durable. Fits the hand easily and maintains the edge forever (or at least as long as I have been using it). You pay more for the quality, but it is well worth it.
Perfect for soft cheeses
Note: my knife came with a value-priced set - Wusthof 4-pc. Gourmet Wine and Cheese Set - that was actually priced below the price of the knife along (at the time of this review).
The knife is designed specifically for soft cheeses such as Camembert and Brie, but it works well with cheeses such as gorgonzola and other blues too. What I love is the balance, the sharp blade and the hole pattern that keeps very soft cheeses from sticking to the blade. The product description on this page claims that this is a forged knife - it's actually a stamped knife made from 'forged' steel. That is not a detriment since stamped knives are perfect for cheese and other lighter uses.
