Brilliant cooking performance
I've had my casserole for several weeks now and can say without reservation that it's the best large pot I've ever used. I've used it for everything from roasting vegetables in the oven to preparing meat sauces on the range without any problems. The heating characteristics are fantastic -- it heats quickly but quite evenly all across the base without discernible hot spots, and as the indications suggest, it transfers more heat than conventional pots and doesn't require quite as much gas to get up to temperature. As is often mentioned on reviews of other Calphalon One cookware, the surface isn't quite "non-stick" in the sense it would be with a Teflon coating; instead, it's very-low-stick, and once your meats have seared they'll release from the surface, often requiring only their natural oils for lubrication. Cleaning is extremely easy, though you certainly should take to heart the manufacturer's warning against using a dishwasher -- the detergents actually will destroy anodized...
Versatile pan with life time warranty!
This Calphalon One works for me as a deep casserole or a dutch oven. It is nonstick, very big at seven quarts, has a nice clear lid. The infused anodized aluminum material transfers heat evenly without hot or cold spots in my experience. It is very light for its size and easy on my wrists. The pan and its non-stick qualities is guaranteed for the life of the pan. The handles are sturdy, and I have never had a problem with them on any of Calphalon pots and pans. It is durable against scratching, but do not use metal utensils, only wood or plastic. It is rated to 500 degrees Fahrenheit. Clean up is really easy, I usually fill it with hot suds and let is sit for a minute, come back with a dish brush and wipe it all out. It is not dishwasher safe though. Nice pan and I recommend.
This is the best pan I own!
This pan is the greatest ... perfect for oversized recipes of chili, sauces and braising. AND a great price!
